If you find that your course is missing from the "My Courses" list, check the End Date of your course on the course's "Settings" page. If the end date has passed, then your course will not appear on this list.
It will continue to show up on your Dashboard under "Past courses", as well as in your "My Courses" list on Moodle's main page.
